What does “suta” mean?
After popping, makhana is passed through a stack of sieves. The traditional unit for the hole size is the suta, and makhana is sold by the sieve it stays on. A higher suta number means a bigger pop. Bigger pops are rarer, whiter and command a higher price.
Because pop size also affects how many pieces you get per kilo, the right grade depends on your product: a premium gift box, a kirana loose pack, a flavoured snack or makhana flour all call for different sutas.
